Open the cupboards and the decision fatigue + hunger = Deliveroo...
So try this:
On a big plate lay out lettuce as a base...then pile up any varied combination of:
Carrot sticks
Diced celery
Thinly sliced onion
Sliced cucumber
Diced radishes
Sliced tomatoes
Diced bell peppers
Thin slices of spring onion
Blueberries
Strawberries
Grapes
Sliced orange
Grapefruit
Avocado
Olives
Edamame
Roasted butternut squash in cubes
Roasted cauliflower or tender-stem broccoli
Few thumbs of nuts/seeds
Few thumbs of cheese
Thumbs of hummus
Boiled eggs sliced
Fresh smoked salmon
Homemade coronation chicken
Homemade tuna mayo
Pickles
Kimchi
Lime pickled onions
Sauerkraut
it can be a great idea to combine nuts, seeds, fruits and cooked veggies into one bowl for nutrient variety and texture density, which means you’ll be motivated to keep eating these veggies. Very easy to hit a wide variety in one go!
Dress with a simple honey/miso/oil/dressing and add a protein and it’s a meal if you like?!
