Lemon Meringue and Coconut Protein Bites

Sticky, chewy dough that can be an easilicious (yes that’s easy and delicious) sweet way to hit a protein goal with something you can easily pop into your bag and take with you.
No gluten, full of essential healthy fats and marshmallow provides gelatine.
This recipe makes 8 balls. Just don’t eat them all in one go.
Pre or post workout or any time you need a sweet protein hit.
90g lemon meringue whey from @bulk
20g oats
20g puffed rice
70g ground almonds
20g almond butter
20g desiccated coconut
20g marshmallows
10g honey
25g stevia
90mls unsweetened almond milk
1/2 tsp vanilla extract
Place all of your dry ingredients into a bowl and mix very well. Add the wet ingredients and mix into a fudge like dough.
Divide the mixture into eight equal portions and roll into balls with wet hands.
Roll each ball into the coconut and keep in the fridge for up to 10 days.
