25g cocoa powder
5g dark chocolate (chopped)
25g almond flour
Dash of vanilla extract
In a bowl combine the butter, sweetener and cocoa powder then melt (microwave, in a low warm oven or over boiling water) and combine into a thick dark paste, allow to cool slightly.
Meanwhile, chop chocolate and beat the egg.
Add the beaten egg to the bowl until fully incorporated looking glossy.
Add the chocolate and the flour and fully incorporate it with a dash of vanilla extract.
Line a deep narrow dish with baking parchment and pour the mixture in.
Bake at 350F for 15mins or to an internal temp of 155F in the centre.
Visually the outside is “set” but a chopstick or toothpick still comes out dirty.
Allow it to fully cool and store in fridge overnight.
