2 small sweet potatoes (110-125g each)
150g 5% beef mince
30g light cream cheese - can be cottage cheese, Boursin or even swap for an egg...
60g cheddar
2 tsp butter *optional
1 clove of garlic grated
2 spring onions diced
1 tsp Cajun seasoning
Preheat oven to 200c
Trim the bitter ends from the sweet potatoes and place in a microwave for six minutes until squishy and tender. Alternatively roast for 40 minutes.
Fry beef mince in a pan and slightly allow to cool then combine with the Cajun, cheeses, garlic, onions and combine very well.
Split the sweet potatoes in half and lay into a tray, add 1 tsp butter to each potato and spread.
Layer the beef mixture over the potatoes evenly and roast in the oven for 6-8 minutes until melty and just slightly crisp on the edges.
Serve with fresh peas, steamed greens or fresh slaw.
Serves 2 as snacks or 1 main.
