Sausage, Cheese and Broccoli Egg Cups

2 plain pork sausage (75g/10g fat each)

2 eggs (110g)

50ml single cream

20g dutch cheese

Palm sized amount of broccoli

Tbsp micro diced scallion

Pinch of sea salt and black pepper

Preheat oven to 180C (360F)

Cut your broccoli into bite sized amounts and put into a bowl of boiling water for 2-3minutes.

Remove the skins from the sausage and divide the meat equally into 8 pots of a muffin tray - press into the edges as far and flat as you can.

Beat the eggs with a pinch of sea salt and add the single cream.

Drain broccoli from the water and divide equally into the muffin tray on top of the sausage-meat with a pinch of scallion and top with some cheese. Repeat this over the remaining seven cups.

Place into the oven for 10-12 minutes until colourful around the edges and the centre is set.
