Roasted Peach and Grape Nut Stacked Parfait

1 peach

1 tsp honey

1/2 vanilla pod or drops of essence

1 Aldi Brooklea Peach and Passionfruit Protein yoghurt (or 200g of 0% yoghurt)

2 tbsp Grape Nuts (25g)

Additional goodies like 1 tsp raisins and 1 tbsp marshmallows - marmalade and crushed pistachios, sugar free jelly or any dried fruit and raw or coated nuts.

Slice your peach (or if making a few - quadruple up!) and lay into a roasting dish, drizzle with 1 tsp of honey each peach and add vanilla. Roast at 180C for 10-15 minutes until soft. Allow to cool and add all flesh and juice to the glass.

Later on top 1 tbsp Grape Nuts (or use toasted oats/granola or your favourite bran cereal) and then 1/2 of the pot of yoghurt, add a layer of your additional goodies and cover with the second half of yoghurt.

Top with the second tbsp of Grape Nuts. Fully chill for a minimum of 30 minutes or overnight.

Serves 1 - calories and macros with marshmallows and raisins.
