In a bowl combine all of your ingredients and using a hand blender grind down until you get a soft dough.
If your mixture is wet add a little more cocoa powder or coconut flour, if it's too crumbly add more almond milk.
Rest in the fridge packed tight for 20-30minutes.
Roll the dough into eight truffles and then place into a bowl of cocoa powder and roll to coat until they lose their stickiness, tap off the excess powder.
Keep in the fridge in an air tight container for 2-3 days.
