Honey and Soy Omelette with Baked Apples

3 large eggs

10g or 2 tsp honey

1 tsp soy (tamari for gluten free)

3 medium apples

Juice of 1/2 lemon

1 tsp stevia/xylitol

Lay 1/2 sliced apples in a baking dish and cover with the juice of 1/2 lemon and a tsp stevia or sweetener of your choice (stevia is actually an insulin sensitiser) you could also add a pinch of cinnamon and vanilla if you would like.

Bake at 140C for about 40 minutes or until soft n caramelised.

Combine eggs in a bowl with the honey and the soy and cook in a non-stick until desired consistency.
