Hasselback Potatoes - 3 ways!

300g or 1 large sweet or white potato

1 tsp olive oil

Big pinch of sea salt

Preheat oven to 180C

Place washed/dried potato on a roasting tray whole.

Slice down the potato but leaving a 1cm or so gap at the bottom as to not slice the whole way through.

Coat the potato in the oil and salt. Roast for 45 minutes or until soft.

# 1 - 2 rashers of streaky bacon grilled

60g roulé or other spreadable cheese.

30g cheddar grated

½ tsp smoked paprika

2 tbsp salsa

15g chopped walnuts

20g 70% or above dark chocolate Pinch of rosemary fresh or dried Pinch of sea salt
