This is just for good food eatin'
When the sun comes out it's so much easier to eat better - but salad is WAY more than tomatoes, iceberg lettuce, onion and maybe peppers hehe.
Diced Romain or Gem Lettuce or any soft leaves Red onion Cucumber Broccoli Asparagus Apple Grape Lower fat coleslaw Cheddar wedge Parmesan pile Boiled eggs Boiled potatoes (dressed in mint sauce and a dabble of chipotle paste - I went way over here but it's great with cheese...)
Slice and boil potatoes for 10-15 mins along with any green veg like I’ve used here until tender and run under cold water.
Boil eggs for 6-8 minutes and allow to cool under a tap.
Dice a few grapes, 1/2 an apple, a little red onion and plate up.
Add coleslaw, slice of cheese and stack of Parmesan, peel the egg and dress the potatoes.
Plate up and enjoy!
